La Brisolée
La brisolée is eaten from the end of September, when hunting season is also in full swing. The traditional version consists of chestnuts roasted over a wood fire accompanied by various alpine cheeses, seasonal fruits (apples, pears), freshly picked grapes – as this is also the grape harvest season – rye bread with walnuts or chestnuts, bacon, and butter. All washed down with must, new wine or Arvine, the emblematic grape variety of Valais. In its “royal” version, brisolée is accompanied by various charcuterie meats (dried meat, cured ham, sausage, etc.).
