Hunting is a very popular tradition in the Evolène region.
Several restaurants propose special dishes and menus from the local hunting.

The Brisolée

The brisolée is eaten from the end of September, at the time when hunting is also in the spotlight. The traditional version consists of chestnuts roasted on a wood fire accompanied by various mountain cheeses, seasonal fruits (apples, pears), freshly picked grapes - because it is also the harvest period -, rye bread with nuts or chestnuts, bacon and butter. The whole dish is washed down with must, new wine or Arvine, the emblematic Valaisan grape variety. In the "royal" version, the brisolée is decorated with various cold cuts (dried meat, raw ham, sausage, etc.).
